Patrick J & Mary Jo Randolph, owners of the OK Cafe, purchased it
in 1974. Of the eighty-one years the OK Cafe has been in existence, the
Randolph's have owned it for the past thirty three.
Pat was born and raised in Hastings, the ninth of the ten children of
Mr. and Mrs. F. E. Randolph. Patrick attended St. Cecilia's High School,
graduating in 1962, and from Hastings College in 1968 with a degree in
psychology.
Mary Jo (Hinrichs) Randolph grew up on a farm near Glenvil. She
went to country schools, and Hastings High School graduating in 1964. In
1967 she graduated from Kearney State College with a B.A. in Education.
She taught English and French for ten years.
In joining her husband in the pursuit of small businesses, they found
the OK Cafe to be their true love in the world of small business endeavors.
They have enjoyed doing business with this community, They worked to
make the OK Cafe a place where the people of this community would feel
comfortable, enjoy home cooked food, a touch of history in the antiques
displayed, relax and be taken care of by a courteous and concerned staff
all the while felling they had all the comforts of home.
Patrick who had worked during college for the Union Pacific Railroad
brought his love of the railroad to the restaurant by installing a miniature
railroad named by its patrons, The Dinner Bell Express, which roars
around near the ceiling on its route every twenty four minutes.
Outside Patrick has a windmill, water tower and a fenced in area under
the windmill where you can find colorful pigeons, so tame they will eat
from your hands.
The OK Cafe is truly a menagerie of diverse and entertaining decor as
well as diverse patrons from every walk of life representing every field of
endeavor in the town. We are so proud to be a part of this restaurant,
having provided this community with the finest home cooked food outside
their own kitchens and a place for them to relax and enjoy.
